- ½ pound (8 ounces) penne pasta
- 3 tablespoons butter
- ½ tablespoon flour
- 2 cloves garlic, minced
- 2 cups corn, fresh or frozen
- 2/3 cup heavy cream
- 1 tablespoon lemon juice, freshly squeezed
- ½ cup parmesan cheese, freshly grated
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ cup fresh basil
Instructions
- Bring a large pot of salted water to a boil. Cook the penne pasta until al dente according to package directions, about 8-10 minutes. Reserve ½ cup of pasta water, then drain the pasta.
- In a large skillet, melt butter over medium heat until sizzling. Whisk in flour and cook for 1 minute to remove raw flavor.
- Add minced garlic and corn, cooking for about 2 minutes until fragrant and the corn softens.
- Pour in heavy cream, lemon juice, and ¼ cup reserved pasta water. Stir over medium heat for about 1 minute until the mixture is smooth and slightly thickened. Stir in Parmesan cheese until melted, adding more pasta water for a looser sauce if needed.
- Season the sauce with salt and pepper. Toss the drained pasta and fresh basil into the skillet until well-coated.
- Serve immediately, garnished with extra Parmesan and basil if desired.
Notes
Feel free to substitute the pasta type with your favorite.
Use fresh corn when in season for the best flavor.
Add a pinch of red pepper flakes for some heat.
