Description

This Easy Cowboy Caviar is a flavor-packed dish made with black beans, corn, and fresh vegetables. Perfect for parties or as a healthy snack, it brings together vibrant tastes for an enjoyable experience.


Ingredients

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 large red bell pepper, seeded and diced
  • 1 large yellow bell pepper, seeded and diced
  • 2 fresh jalapeños, seeded and diced
  • 1 ½ cups frozen corn kernels, thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato, optional
  • 2 fresh avocados, diced, optional, added just before serving
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime, juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, red bell pepper, yellow bell pepper, jalapeños, corn, onion, cilantro, and tomatoes.
  2. Blend the red wine vinegar, honey, lime juice, salt, chipotles, and sauce in a blender until mixed. Slowly stream in the oil while blending on low to emulsify the dressing. Stir in the oregano and black pepper, adjusting seasonings as needed.
  3. Drizzle half of the dressing over the bean mixture and stir to combine. Cover the bowl and refrigerate for at least 3 hours.
  4. Prior to serving, give the cowboy caviar a stir, adding more dressing if desired. Stir in fresh avocado just before serving if using. Any excess dressing can be stored in the refrigerator for a few days and works great as a marinade.
  5. Serve with tortilla chips or as a topping for tacos.

Notes

Adjust the level of heat by varying the amount of jalapeños and chipotles added.
For the best flavor, allow the cowboy caviar to chill for at least 3 hours before serving.
Fresh lime juice adds extra zing, but bottled juice works as a convenient alternative.
