- 5 graham cracker sheets
- 1 box of brownie mix for an 8×8 inch pan
- 2 egg yolks
- 1/2 cup vegetable oil or melted butter
- 1/3 cup brewed hot coffee
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 2 cups mini marshmallows
Instructions
- Preheat the oven to 325°F and line an 8×8 inch baking pan with parchment paper or aluminum foil, leaving an overhang on the sides.
- Arrange the graham cracker sheets in a single layer at the bottom of the pan, breaking them as needed to fit.
- Mix the brownie mix, egg yolks, hot brewed coffee, vegetable oil or melted butter, vanilla extract, and salt in a large bowl. Fold in the chocolate chips.
- Pour the brownie batter over the graham crackers evenly and bake in the preheated oven for 40 minutes.
- Remove from the oven and carefully top with mini marshmallows. Return to the oven for another 3-4 minutes.
- After baking, use a kitchen torch to toast the marshmallows. Allow the brownies to cool completely before slicing.
Notes
For easier slicing, let the brownies cool thoroughly before cutting.
Feel free to adjust the amount of chocolate chips based on your preference.
