- 2 packages (5.3 oz each) Boursin cheese
- 1 1/2 cups chopped de-seeded tomatoes
- 1/4 cup packed fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or very finely minced
- salt to taste
- pepper to taste
- balsamic reduction, Alessi brand recommended
- crackers or crostini, see notes for recipe
Instructions
- Allow the Boursin to soften at room temperature for 15-20 minutes.
- In a small bowl, mix the chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper. Let it rest for 5 minutes to draw out the juices.
- Spread the softened Boursin cheese evenly in a shallow serving dish.
- Pour the bruschetta mixture over the cheese, leaving the juices behind. Drizzle the juices on salads if desired.
- Top with balsamic reduction and garnish with additional basil. Serve immediately with crackers or crostini.
Notes
Ensure Boursin is slightly softened for easy spreading.
