Description

This Easy Blackberry Pie brings the delightful taste of summer with its sweet blackberry filling and buttery crust. Simple to prepare and perfect for gatherings, this pie is a must-try for anyone who loves homemade desserts.


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. In a food processor, combine flour, sugar, and salt for the crust.
  2. Pulse in cold, diced butter until coarse crumbs form.
  3. Add cold water and pulse until moist clumps form.
  4. Transfer dough to parchment paper, divide into balls, and flatten into discs without kneading.
  5. Wrap each disc in plastic wrap and refrigerate for 1 hour.
  6. Preheat the oven to 400 degrees when crust is ready.
  7. In a saucepan over medium heat, combine water, lemon juice, vanilla, and blackberries for the filling.
  8. Gently stir in sugar and cornstarch, cooking until thickened. Set aside.
  9. Roll out the bottom pie crust to a 12" diameter and place in a 9" pie plate.
  10. Spread the blackberry filling evenly in the crust without spilling on the edges.
  11. Roll out the top crust and place it over the filling.
  12. Trim the edges and pinch together to seal.
  13. Whisk 1 egg and 1 tbsp water; brush over the top crust.
  14. Optionally, sprinkle sugar on top of the pie.
  15. Cut slits in the crust to allow steam to escape.
  16. Bake for 15 minutes; reduce heat to 350 degrees and bake for another 45-50 minutes until bubbly and golden.
  17. Check at 30 minutes and cover the pie if the crust darkens too much.
  18. Allow the pie to cool at room temperature before slicing.

Notes

For a sweeter crust, sprinkle a bit of sugar on top before baking.
Letting the pie cool completely helps set the filling and makes slicing easier.
Feel free to adjust the sugar level in the filling depending on the sweetness of the blackberries.
