- 4 boneless-skinless chicken cutlets pounded to an even thickness (approximately 1 ½ pounds total, each piece approximately ½ inch thick)
- ⅓ cup balsamic glaze
- ¼ cup lemon juice
- 1 tablespoon honey
- 1 tablespoon minced garlic
- 1½ teaspoons italian seasoning blend
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoons olive oil divided (2 tablespoons to cook the chicken and 1 tablespoon to mix with the tomatoes and cheese)
- ¾ cup cherry tomatoes (approximately 18–20 tomatoes)
- ½ cup fresh mozzarella pearls (approximately half of an 8-ounce package)
- 1 tablespoon fresh basil chopped (plus additional for garnish)
Instructions
- Pound the chicken cutlets to an even thickness for uniform cooking.
- In a bowl, mix together balsamic glaze, lemon juice, honey, minced garlic, Italian seasoning, salt, and black pepper.
- Add the chicken to the marinade, coating evenly. Let it sit for about 10 minutes.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the chicken and cook for 5-7 minutes on each side until cooked through.
- Remove the chicken from the skillet and keep warm.
- In the same skillet, add the remaining tablespoon of olive oil, cherry tomatoes, and mozzarella. Cook for 2-3 minutes until tomatoes soften slightly.
- Plate the chicken, top with the tomato and mozzarella mixture, and garnish with fresh basil.
Notes
Feel free to substitute the cherry tomatoes with diced bell peppers for an extra crunch.
Pair with a side of roasted vegetables or a fresh salad for a complete meal.
You can prepare the marinade a day ahead to save time.
