Description

These Crockpot Chicken Fajitas are bursting with flavor! With minimal prep time and only a few key ingredients, they make a delightful, quick dinner option or a healthy meal choice that the whole family will enjoy. Perfect for busy weeknights!


Ingredients

  • 1 (10-ounce) can mild diced tomatoes with green chiles
  • 3 bell peppers (green, yellow, and red, sliced into strips)
  • 1 large yellow onion (sliced)
  • 4 cloves garlic (minced)
  • 1 ½ pounds boneless skinless chicken breasts
  • 1 (1.25-ounce) packet fajita seasoning mix
  • ½ teaspoon black pepper
  • 2 tablespoons fresh lime juice (1 lime)
  • Soft shell fajita tortillas (warmed, optional for serving)
  • Fresh chopped cilantro (optional for serving)
  • Sour cream (optional for serving)

Instructions

  1. Place the diced tomatoes, peppers, onion, garlic, and chicken in a 6-quart or larger slow cooker.
  2. Sprinkle the fajita seasoning and black pepper over the chicken, then drizzle the lime juice on top.
  3. Cover and cook on low for 6–8 hours or high for about 4 hours, until the chicken is thoroughly cooked and tender.
  4. Remove the chicken from the slow cooker and shred it with two forks, then return it to the cooker and stir to mix with the juices and vegetables.
  5. Serve in warmed tortillas, garnished with cilantro and sour cream if desired.

Notes

The leftover chicken can be used in tacos or salads for another meal.
For added flavor, marinate the chicken in the fajita seasoning for several hours before cooking.
Adjust the spice level by using a hotter salsa or seasoning if desired.
