Instructions
- Season the chicken thighs on both sides with salt, black pepper, smoked paprika, and garlic powder.
- Heat oil in a skillet over medium heat; sear chicken thighs skin-side down until the skin is golden and crispy.
- Place the seared chicken in the slow cooker, skin-side up.
- In a separate bowl, whisk together yellow mustard, honey, brown sugar, apple cider vinegar, and Worcestershire sauce until smooth.
- Pour the sauce around the chicken in the slow cooker, avoiding the skin to maintain crispiness.
- Cover and cook on LOW for 5–6 hours until the chicken is tender.
- Uncover the slow cooker during the last 30 minutes to thicken the sauce.
