Description

Crockpot Carolina Gold BBQ Chicken Thighs bring together a mouthwatering blend of chicken, mustard, and honey. With simple preparation and easy cooking, this dish is the perfect comfort food for a quick weeknight dinner.


Ingredients

  • 6 bone-in skin-on chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 tablespoon oil
  • ¾ cup yellow mustard
  • ¼ cup honey
  • ¼ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon worcestershire sauce

Instructions

  1. Season the chicken thighs on both sides with salt, black pepper, smoked paprika, and garlic powder.
  2. Heat oil in a skillet over medium heat; sear chicken thighs skin-side down until the skin is golden and crispy.
  3. Place the seared chicken in the slow cooker, skin-side up.
  4. In a separate bowl, whisk together yellow mustard, honey, brown sugar, apple cider vinegar, and Worcestershire sauce until smooth.
  5. Pour the sauce around the chicken in the slow cooker, avoiding the skin to maintain crispiness.
  6. Cover and cook on LOW for 5–6 hours until the chicken is tender.
  7. Uncover the slow cooker during the last 30 minutes to thicken the sauce.

Notes

Searing the chicken beforehand enhances the flavor; don’t skip this step.
Feel free to adjust the sweetness by varying the amount of honey and brown sugar.
Consider serving the chicken with coleslaw or cornbread for a complete meal.
