- 1 pound dried navy beans
- 5 cups water
- 1 medium yellow onion, diced
- 1/2 cup brown sugar
- 1/3 cup molasses
- 1/3 cup apple cider vinegar
- 6 ounces tomato paste
- 2 tablespoons yellow mustard
- 1 teaspoon pepper
- 5 strips thick cut bacon, cooked until crisp and cut into small pieces
- 3 teaspoons salt
Instructions
- Rinse the dried beans in a colander and remove any damaged beans.
- In the crockpot, combine rinsed beans, water, diced onion, brown sugar, molasses, apple cider vinegar, tomato paste, yellow mustard, and pepper.
- Set the crockpot to high for 9-10 hours. If beans are presoaked, use low for 8-10 hours or high for 4-6 hours.
- In the final hour of cooking, stir in the cooked bacon and salt.
Notes
For added flavor, consider using smoked bacon.
