Description

Ingredients

  • 4 cabbage steaks
  • 1/3 cup olive oil
  • 1 1/2 tsp. minced garlic
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. smoked paprika
  • 1 1/2 cups grated parmigiano reggiano cheese
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. chopped parsley

Instructions

  • Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  • Wash and vertically slice the cabbage in half. Cut 1-inch thick steaks from one half, ensuring they stay together through the stem.
  • In a bowl, mix olive oil, 1/3 cup Parmesan, garlic, salt, pepper, and smoked paprika.
  • Brush both sides of the cabbage steaks generously with the oil mixture.
  • On the baking sheet, create cheese piles using the remaining Parmesan, one for each steak.
  • Place each cabbage steak atop its cheese pile on the baking sheet.
  • Roast in the oven for 20-25 minutes, or until the cheese becomes golden and crisp.
  • Drizzle balsamic vinegar over the roasted steaks and sprinkle with chopped parsley before serving.
