Description

This Cowboy Chicken features juicy chicken cutlets, smoky spices, and vibrant toppings, making it a delightful option for a quick and satisfying meal.

Ingredients

Scale
  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil, divided
  • 1 small yellow onion, diced
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15.25 ounce) can corn kernels or southwest corn, drained
  • 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
  • 2 tablespoons fresh lime juice (juice from 1 lime)
  • ¼ cup barbecue sauce (any variety)
  • ¾ cup shredded Mexican cheese blend
  • Chopped fresh cilantro, jalapeños, and avocado for serving

Instructions

  1. Preheat the oven to broil (500°F) and set the rack 6 inches below.
  2. Combine smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl; reserve 1½ teaspoons for the cowboy caviar.
  3. Season both sides of the chicken with the seasoning mixture.
  4. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Cook the chicken for 3-4 minutes on each side until fully cooked (165℉) and transfer to a plate.
  5. Reduce heat to medium and add the remaining tablespoon of olive oil to the skillet. Add diced onion and cook until tender, about 4-5 minutes.
  6. Stir in the black beans, corn, diced tomatoes, reserved seasoning mix, and lime juice. Cook for 4-5 minutes until heated through.
  7. Return the chicken to the skillet. Brush barbecue sauce over the chicken and sprinkle with shredded cheese.
  8. Broil for 2-3 minutes, or until the cheese is melted and bubbly.
  9. Serve topped with sliced jalapeños, chopped cilantro, and avocado if desired.

Notes

You can use chicken breasts or cutlets according to preference.
Feel free to customize the toppings with your favorites such as sour cream or salsa.
This dish can be a delightful meal prep option, as it reheats well.
