  • 1 teaspoon baking powder
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup whole milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the flour and baking powder.
  2. In a separate bowl, combine the cottage cheese, eggs, milk, maple syrup, and vanilla extract. Whisk until smooth and well combined.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Gently stir until just combined, being careful not to overmix as a few lumps are fine.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
  5. Scoop about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on top and the edges are set.
  6. Flip the pancakes and cook for another 1-2 minutes, until golden brown and cooked through.
  7. Repeat the process with the remaining batter, greasing the skillet as necessary.
  8. Serve warm with extra maple syrup, fresh fruit, or preferred toppings.

Pancakes can be kept warm in an oven set to low until all are cooked.
