- ¼ teaspoon onion powder
- ¼ teaspoon dry mustard powder
Instructions
- Cook the elbow macaroni in salted boiling water based on the package instructions. Reserve ½ cup of pasta water, then drain the macaroni and set aside.
- In a blender, blend together the cottage cheese, cheddar cheese, sour cream, milk, Parmesan cheese, cornstarch, salt, onion powder, and optional dry mustard until smooth.
- Pour the blended mixture into a large saucepan over medium-low heat. Stir frequently for about 6 to 8 minutes until the sauce becomes smooth and creamy.
- Stir the cooked pasta into the sauce until fully coated, cooking for an additional 1 to 2 minutes until heated through.
- Allow the dish to rest for a few minutes to thicken. If needed, add reserved pasta water to achieve the desired consistency.
Notes
For creamier texture, use full-fat cottage cheese and sour cream.
Adjust the seasoning with more salt or spices to taste.
