Ingredients

  • 1 1/2 cups cottage cheese
  • 3 cups frozen strawberries
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 cup cottage cheese
  • 3 cups frozen banana slices
  • 3 tablespoons honey
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Blend 1 1/2 cups of cottage cheese in a food processor until smooth and creamy, about 1 minute.
  2. For the strawberry flavor, add 3 cups of frozen strawberries, 3 tablespoons of honey, and 1 tablespoon of lemon juice to the food processor. Blend until creamy, about 3 to 4 minutes.
  3. For the banana flavor, add 3 cups of frozen banana slices, 3 tablespoons of honey, and 1 1/2 teaspoons of vanilla extract to the food processor. Blend until creamy, about 3 to 4 minutes.
  4. Serve the ice cream immediately or store it in an airtight container in the freezer for up to 1 month. To serve, let it sit at room temperature for 5-10 minutes before scooping.

Notes

Using fresh strawberries enhances the flavor, but frozen ones work well too.
You can customize the flavors by experimenting with different fruits or natural sweeteners.
For a lower-calorie version, consider using low-fat cottage cheese.
