- 1¼ pounds ground chuck (80% lean ground beef)
- ½ teaspoon freshly ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground mustard
- 1 teaspoon worcestershire sauce
- ½ tablespoon vegetable oil, for cooking
- heaping ¾ teaspoon kosher salt
- 4 slices cheddar cheese
- 4 hamburger buns (lightly toasted, if desired)

Instructions
- In a large bowl, mix the ground beef, black pepper, garlic powder, onion powder, ground mustard, and Worcestershire sauce. Do not add salt yet.
- Form the mixture into 4 meatballs (about 4½ oz each) and flatten them into 1-inch thick discs. Smooth out the edges and refrigerate for at least 15 minutes.
- Heat a 12-inch cast-iron skillet over medium-high heat and turn on the exhaust fan. Season the patties with kosher salt.
- Add vegetable oil to the hot skillet. Place the burgers in the skillet one at a time, smashing them down flat to about ¼-inch thick with a spatula, then cook for about 2 minutes until browned.
- Flip the burgers, add cheese on top, and cook for an additional 2-3 minutes depending on desired doneness. Serve on buns with toppings of choice.
Notes
For extra crispy edges, make sure the skillet is very hot before adding the patties.
These burgers can be frozen for up to three months. Freeze them on a baking sheet first before transferring to a bag.
Thaw uncooked burgers in the refrigerator overnight before cooking.
