Description

Chocolate Zucchini Muffins are a delightful treat that perfectly combine the rich flavor of cocoa with the moistness of zucchini. These muffins are simple to prepare and perfect for a quick breakfast or snack, providing a flavorful experience that is hard to resist.


Ingredients

  • 1/2 cup cocoa powder
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 5 tbsp butter, melted
  • 1 tsp vanilla
  • 1 cup milk
  • 3/4 cup chocolate chips
  • 1 cup zucchini, shredded

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit and line a 12-cup muffin pan with muffin liners.
  2. In a large mixing bowl, combine flour, cocoa powder, white sugar, brown sugar, baking powder, and baking soda, whisking until well blended.
  3. In a separate bowl, add the egg, melted butter, and vanilla, mixing them together. Gradually stir in milk.
  4. Fold the chocolate chips and shredded zucchini into the mixture, ensuring all ingredients are well combined.
  5. Evenly distribute the batter into the muffin liners, filling each one. Add more chocolate chips to the top if desired.
  6. Bake for 20 minutes, or until a toothpick inserted comes out clean.

Notes

For added moisture and flavor, use fresh zucchini and squeeze out excess water from the shredded zucchini before mixing.
Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for later enjoyment.
Feel free to substitute half the flour for whole wheat flour for a healthier option.
