- 4 cloves garlic
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1 cup green olives (pitted or non-pitted)
- 1 cup pitted prunes
- 2 tablespoons capers
- Salt to taste
- 8 chicken thighs (bone-in, skin-on)
- Chopped parsley for garnish
- 1 cup white wine
Instructions
- Peel and chop the garlic, or use a mini food processor. In a large glass or ceramic bowl, mix together the garlic, basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, a good pinch of salt, and the chicken thighs. Ensure the chicken is well coated with the marinade, cover the bowl with plastic wrap, and refrigerate overnight or for at least 3 hours.
- Preheat the oven to 180C/350F. Arrange the chicken along with the marinade and all ingredients in a large baking pan, or divide into two pans to avoid overcrowding. Pour white wine around the chicken while avoiding pouring directly on it for a crispy skin.
- Roast in the preheated oven for 50 minutes to 1 hour until the chicken is fully cooked and skin is golden. The internal temperature should reach 74C/165F. Garnish with chopped parsley before serving.
Notes
Marinating the chicken overnight enhances the flavors.
This dish pairs beautifully with roasted vegetables or a fresh salad.
For an added crunch, broil the chicken for a few minutes at the end of cooking.
