This Cheesy Ground Beef Zucchini Skillet combines lean ground beef with fresh zucchini and gooey mozzarella for a simple, satisfying, and healthy dinner that the whole family will love.

- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 teaspoons minced garlic
- 1 tablespoon worcestershire sauce
- 1 teaspoon italian seasoning
- 1 teaspoon beef better than bouillon
- ½ teaspoon crushed red pepper flakes, optional
- 1 (14.5 oz) can petite fire roasted tomatoes
- 3–4 small zucchini, cut into quarter pieces
- 1 cup shredded mozzarella cheese
Instructions
- In a large skillet over medium heat, brown the ground beef with the onion until no longer pink, breaking it up with a wooden spoon.
- Drain any excess grease from the skillet if needed.
- Add garlic, Worcestershire sauce, Italian seasoning, beef bouillon, red pepper, and tomatoes (do not drain).
- Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
- Add zucchini to the skillet and simmer for another 10 minutes until just softened.
- Top the dish with shredded mozzarella, lower the heat, and cover for 3-5 minutes until the cheese melts.
Notes
Feel free to use ground turkey as a healthier option.
Add more vegetables like bell peppers for extra flavor and nutrition.
Adjust the red pepper flakes based on your spice preference.
