This Cheddar Pie Dough features a rich, buttery flavor and a flaky texture, making it perfect for savory pies. With easy prep and chilled ingredients like cheddar cheese, it’s a go-to for delicious homemade meals.
Ingredients
Scale
- 325 g all-purpose flour
- 12 g granulated sugar
- 1 tsp kosher salt, Diamond Crystal preferred
- 227 g salted butter, cut into tablespoons, chilled
- 70 g shredded cheddar, large shreds, chilled
- 2 large egg yolks, chilled
- 5 Tbsp ice cold water
Instructions
- Chill sliced butter and flour mixture in the freezer for 10-15 minutes before starting.
- In a large bowl, whisk together the flour, sugar, and salt.
- Add the cold butter and toss to coat. Use a pastry blender or fingers to cut the butter into the flour mixture until it resembles coarse, pebbled sand.
- Stir in the shredded cheese, followed by egg yolks and ice water. Mix until it looks like a 'shaggy mess' or scrambled eggs.
- Transfer the mixture to a clean work surface and gently knead until the dough comes together. It should feel dry and not smooth.
- Divide the dough into two equal parts, flatten into disks, and wrap tightly in plastic wrap.
- Chill in the refrigerator for at least 30 minutes, ideally overnight.
Notes
The dough can be made ahead and stored in the fridge for up to 2 days or frozen for later use.
For a more intense flavor, use sharp cheddar cheese.
Ensure everything is chilled to achieve a flaky texture.
