  • 12 oz grape or cherry tomatoes, halved
  • 8 oz mozzarella pearls
  • 2 tablespoons finely chopped basil
  • 1 tablespoon olive oil
  • 1 clove garlic, minced

  • 2 boneless skinless chicken breasts, about 1 ½ lbs

  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 3 large eggs
  • 1 cup panko bread crumbs
  • 3/4 cup freshly grated parmesan cheese
  • 1 tablespoon finely chopped parsley
  • 1/2 cup olive oil, for frying
  • balsamic glaze, for drizzling
  • chopped fresh basil, for sprinkling

Instructions

  1. In a medium bowl, mix together the tomatoes, mozzarella, basil, olive oil, garlic, salt, and pepper to create the caprese salad.
  2. Take the chicken breasts on a cutting board. Cut the chicken breasts horizontally to butterfly them, then slice each into 4 equal pieces.
  3. Cover the chicken with plastic wrap and pound it to a thickness of about 1/4 inch. Season with salt and pepper after removing the wrap.
  4. For coating, combine flour, garlic powder, salt, and pepper in a shallow bowl. Whisk eggs in another bowl, and mix panko, Parmesan, and parsley in a third bowl.
  5. Dredge the chicken in the flour mix, dip in eggs, then coat with the panko mixture, ensuring all sides are covered until all pieces are breaded.
  6. In a large skillet, heat the oil over medium high heat. Cook the chicken for 2 to 3 minutes on each side until thoroughly cooked. Place on paper towels to drain excess oil.
  7. Plate the chicken and top with caprese salad. Serve immediately.
