Description

This Breakfast Burrito combines flavor and convenience with cubed potatoes, eggs, ground sausage, and melty cheese wrapped in a tortilla. It’s perfect for meal prep or a quick breakfast option that satisfies!


Ingredients

  • 3 cups cubed golden potatoes, ½ inch cubes
  • ½ medium white onion, diced
  • 1.5 tablespoons olive oil
  • 1 teaspoon italian seasoning
  • 1 teaspoon sea salt
  • ¾ teaspoon chili powder
  • 10 large eggs
  • ¼ cup milk, any kind
  • ¼ teaspoon sea salt
  • 1 tablespoon olive oil
  • ½ cup shredded cheddar jack cheese
  • 1 lb. ground breakfast sausage
  • 2 tablespoons maple syrup
  • 1.5 cups shredded cheddar jack cheese
  • 810 large tortillas

Instructions

  1. Heat a large skillet over medium/high heat. Add the potatoes and onion, coat with olive oil, and season with Italian seasoning, sea salt, and chili powder. Brown for 3-4 minutes, then reduce heat to medium/low and cover, cooking until tender for about 10-15 minutes.
  2. In a separate skillet, cook the sausage over medium/high heat until fully cooked; add maple syrup during cooking. Remove the sausage and set aside.
  3. In a large bowl, whisk together the eggs and milk, then add salt.
  4. Using the skillet from the sausage, heat olive oil over medium/high heat. Pour in the egg mixture once fragrant. Let it set at the edges, then fold the eggs toward the center without flipping. After 2-3 minutes, add cheese and continue folding until cooked. Remove from heat.
  5. Lay tortillas on a flat surface and distribute potatoes, egg mixture, sausage, and cheese evenly in the center. Tightly roll each burrito.
  6. Store burritos in the refrigerator for up to 3 days or wrap in foil and freeze for up to 3 months.
