These Blueberry Pie Bars combine a buttery crust with sweet, tart blueberries, making them a delightful treat. Simple to prepare and perfect for sharing, they’re an easy homemade dessert that everyone will love!

- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat oven to 350°F and line an 8×8 baking dish with parchment paper, leaving a 1” overhang for easy removal; set aside.
- In a large bowl, mix the flour, oats, brown sugar, baking powder, and salt. Add the melted butter and vanilla, and stir to combine.
- Press ⅔ of the crust mixture into the bottom of the prepared baking dish and set aside.
- In a separate bowl, mix the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust, then sprinkle the remaining ⅓ crust mixture on top of the blueberries.
- Bake for about 55 minutes, or until the blueberries are bubbling and the crust is golden. Let the bars cool completely before removing from the pan and slicing into 9 bars.
Notes
For best flavor, use fresh blueberries when in season.
Feel free to add a sprinkle of cinnamon to the crust mixture for an extra flavor boost.
Serve warm or chilled, these bars are delicious either way.
