Description

These Blueberry Muffin Bites are irresistibly flavorful and incredibly easy to prepare. Loaded with fresh blueberries, they’re ideal for breakfast, snacks, or dessert!


Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 2 eggs
  • 8 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 400°F and line a mini muffin pan with mini paper liners.
  2. In a medium bowl, mix together flour, sugar, baking powder, and salt until well combined.
  3. Whisk together milk, eggs, melted butter, and vanilla extract in a smaller bowl or larger measuring cup.
  4. Pour the wet ingredients into the dry mixture and stir until just combined, being careful not to over-mix.
  5. Gently fold in the blueberries into the batter.
  6. Spoon the batter into the muffin liners, filling each about 2/3 full.
  7. Bake for 10-12 minutes, or until lightly browned and a toothpick comes out clean from the center.
  8. Let cool before serving; serve as is or with a vanilla glaze.

Notes

Ensure you do not over-mix the batter for light and fluffy muffins.
These muffin bites freeze well; simply reheat them in the microwave before serving.
Feel free to substitute blueberries with other berries if desired.
