These Blueberry Muffin Bites are irresistibly flavorful and incredibly easy to prepare. Loaded with fresh blueberries, they’re ideal for breakfast, snacks, or dessert!

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup whole milk
- 2 eggs
- 8 tablespoons unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 cup blueberries
Instructions
- Preheat the oven to 400°F and line a mini muffin pan with mini paper liners.
- In a medium bowl, mix together flour, sugar, baking powder, and salt until well combined.
- Whisk together milk, eggs, melted butter, and vanilla extract in a smaller bowl or larger measuring cup.
- Pour the wet ingredients into the dry mixture and stir until just combined, being careful not to over-mix.
- Gently fold in the blueberries into the batter.
- Spoon the batter into the muffin liners, filling each about 2/3 full.
- Bake for 10-12 minutes, or until lightly browned and a toothpick comes out clean from the center.
- Let cool before serving; serve as is or with a vanilla glaze.
Notes
Ensure you do not over-mix the batter for light and fluffy muffins.
These muffin bites freeze well; simply reheat them in the microwave before serving.
Feel free to substitute blueberries with other berries if desired.
