These Blueberry Crumble Cheesecake Bars are a perfect blend of creamy cheesecake and vibrant blueberries, topped with a crunchy oatmeal crumble. Easy to make, they are ideal for gatherings or as a sweet treat at home!

- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare a 9 x 13-inch pan with non-stick spray.
- In a mixing bowl, blend together the softened butter, sugar, and brown sugar until smooth. Incorporate baking soda, salt, flour, and quick oats.
- Take half of this mixture and press it evenly into the bottom of the prepared pan. Bake for 13 minutes.
- While the base is baking, prepare the cream cheese filling.
- In another bowl, beat the softened cream cheese with sweetened condensed milk until smooth. Add in vanilla and egg yolk, mixing well.
- Once the base layer is done baking, spread the cream cheese mixture evenly over the baked layer.
- Top the cream cheese with blueberries spread evenly across the surface.
- Sprinkle the remaining crumble mixture on top and press down lightly.
- Return to the oven and bake for an additional 20-25 minutes, or until the edges are golden brown.
- Allow it to cool completely before cutting into bars.
Notes
For the best texture, use room temperature cream cheese.
Ensure that the blueberries are evenly distributed for maximum flavor in each bite.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
