Instructions

  1. In a bowl, mix graham cracker crumbs, 1/3 cup granulated sugar, and melted butter until well combined.
  2. Press the mixture firmly into a 9-inch deep pie dish to form the crust.
  3. Chill the crust while preparing the filling.
  4. In a large mixing bowl, beat softened cream cheese until smooth and creamy.
  5. Add powdered sugar, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice, mixing until thoroughly combined.
  6. In another bowl, whip heavy cream until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  8. Spread the cream cheese filling into the chilled crust.
  9. In a saucepan, combine blueberries, 1/4 cup granulated sugar, 1 tablespoon lemon juice, and cornstarch mixture over medium heat.
  10. Cook until the blueberries have released their juices and the mixture has thickened slightly.
  11. Allow the blueberry topping to cool, then pour it over the cream cheese layer.
  12. Chill the pie in the refrigerator for at least 4 hours before serving.

Notes

Ensure the cream cheese is at room temperature for easier mixing.
You can use store-bought graham cracker crust if you’re short on time.
