Ingredients

- ¾ cup fresh blueberries, or frozen
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste , or extract
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine the blueberries, honey, and lemon juice. Heat until boiling, then reduce to low and simmer for 10 minutes, or until the blueberries are reduced by half.
- Remove from heat and let the mixture cool for about 10 minutes.
- In a blender, mix the cottage cheese, maple syrup, cornstarch, and vanilla bean paste until smooth.
- Start layering the popsicles in molds with the cottage cheese mixture and blueberry sauce.
- Top with crushed graham cracker pieces.
- Freeze overnight or for at least 5 hours.
Notes
These popsicles can be stored in the freezer for up to 2 weeks.
Feel free to substitute other berries for a different flavor profile.
Adjust the sweetness by varying the amount of maple syrup to your taste.
