Description

This blackberry vinaigrette adds an irresistible flavor to salads and dishes. With simple ingredients like fresh blackberries and olive oil, it’s perfect for quick meals or healthy options.


Ingredients

  • 1 cup (140 g) blackberries, fresh or frozen
  • ½ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey, or more to taste
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon finely minced shallot
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dijon mustard

Instructions

  1. Combine the blackberries, olive oil, apple cider vinegar, honey, lemon juice, shallot, salt, pepper, and Dijon mustard in a blender or a suitable jar for an immersion blender.
  2. Blend until smooth and well emulsified.
  3. Taste and adjust the seasoning, adding more honey for sweetness or vinegar for extra brightness as desired.
  4. Serve immediately or refrigerate until needed, shaking well before serving if separation occurs.
