- 22 oz. full-fat cottage cheese
- 1/4 – 1/3 cup honey
- 1 teaspoon vanilla extract
- 1 cup + 1/3 cup fresh blackberries
- 3 graham cracker sheets
- 1/2 teaspoon flakey salt (optional)
Instructions
- Add the cottage cheese, honey, and vanilla extract to a high-speed food processor. Process on high until thick and creamy, about 3-5 minutes.
- Add 1 cup of blackberries to the food processor and pulse until just combined, turning the mixture a slight purple color.
- Transfer the mixture to a bowl or a loaf pan and crumble two graham crackers on top, folding them into the mixture.
- Top with the remaining blackberries and crumble one graham cracker over the top; add salt if desired.
- Cover and freeze for at least 4-6 hours or overnight before serving.
- Serve in a dish or on an ice cream cone.
Notes
For a sweeter ice cream, adjust honey to taste.
Using low-fat cottage cheese will reduce the creaminess of the ice cream.
Feel free to mix in other berries for a different flavor profile.
