Description

Enjoy a creamy, delicious Blackberry Cheesecake Cottage Cheese Ice Cream that’s easy to make with fresh blackberries and cottage cheese. Perfect for a tasty treat!


Ingredients

  • 22 oz. full-fat cottage cheese
  • 1/41/3 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup + 1/3 cup fresh blackberries
  • 3 graham cracker sheets
  • 1/2 teaspoon flakey salt (optional)

Instructions

  1. Add the cottage cheese, honey, and vanilla extract to a high-speed food processor. Process on high until thick and creamy, about 3-5 minutes.
  2. Add 1 cup of blackberries to the food processor and pulse until just combined, turning the mixture a slight purple color.
  3. Transfer the mixture to a bowl or a loaf pan and crumble two graham crackers on top, folding them into the mixture.
  4. Top with the remaining blackberries and crumble one graham cracker over the top; add salt if desired.
  5. Cover and freeze for at least 4-6 hours or overnight before serving.
  6. Serve in a dish or on an ice cream cone.

Notes

For a sweeter ice cream, adjust honey to taste.
Using low-fat cottage cheese will reduce the creaminess of the ice cream.
Feel free to mix in other berries for a different flavor profile.
