- 1 teaspoon vanilla extract
- 1 sheet store-bought pie dough or homemade, chilled
- 1 egg for egg wash

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a bowl, combine the mixed berries, sugar, cornstarch, lemon zest, lemon juice, and vanilla extract gently.
- Roll out the chilled pie dough on a lightly floured surface.
- Transfer the dough to the prepared baking sheet.
- Spoon the berry mixture into the center of the dough, leaving space around the edges.
- Fold the edges of the dough over the filling, creating a rustic galette.
- Brush the edges with the egg wash and sprinkle with coarse sugar if desired.
- Bake for 25-30 minutes or until the crust is golden brown and the berries are bubbly.

For a sweeter galette, adjust the sugar according to your taste.
