- 1 baked pie crust
- 1 1/2 cups granulated sugar
- 1/4 cup cornstarch
- 1/2 teaspoon salt
- 3 large egg yolks, beaten
- 3 cups whole milk
- 1 tablespoon unsalted butter
- 1 1/2 teaspoons vanilla extract
- 2 bananas, sliced, plus more for topping
- 1/2 cup whipped cream or store-bought whipped topping
Instructions
- In a medium saucepan off the heat, whisk together granulated sugar, cornstarch, and salt. Then, whisk in the egg yolks along with the milk.
- Place the saucepan over medium heat and stir constantly until the mixture begins to boil and thicken, which should take about 10 minutes. Allow it to boil for 1 minute, stirring continuously until it coats the back of a spoon.
- Remove from heat, then stir in butter and vanilla extract until smooth.
- Place sliced bananas at the bottom of the baked pie crust. Pour the pudding mixture over the bananas, reserving some pudding if necessary. Refrigerate the pie for 4 hours to cool.
- Before serving, whip the cream and pipe it around the edges of the pie. Top with additional banana slices and enjoy!
Notes
Ensure the pie crust is completely cooled before adding the filling.
For extra flavor, consider using ripe bananas for a sweeter taste.
The pudding mixture can be made ahead of time and assembled just before serving.
