- 4 peaches, ripe but firm, halved and pitted
- 3 tablespoons unsalted butter, cut into small cubes
- 4 tablespoons brown sugar, light or dark
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
- 1 tablespoon maple syrup
- Splash of bourbon
Instructions
- Preheat the oven to 375°F. Lightly butter a small baking dish that can hold the peaches snugly.
- Arrange the peach halves cut-side up in the baking dish.
- In a small bowl, combine the brown sugar, cinnamon, and salt. Sprinkle this mixture evenly over the peaches.
- Dot each peach half with the butter, then drizzle with vanilla extract, lemon juice, and bourbon.
- Sprinkle the remaining brown sugar mixture over the peaches.
- Bake for 25 to 30 minutes, or until the peaches are fork-tender and the tops are lightly caramelized.
- Serve warm, ideally with a scoop of vanilla ice cream.
Notes
Make sure to choose peaches that are ripe but still firm for the best texture.
Drizzling some maple syrup adds extra sweetness if desired.
