Description

This baked cod with panko bread crumbs delivers an irresistibly crunchy coating and tender fish. It’s easy to prepare, healthy, and perfect for a quick weeknight meal!


Ingredients

  • 2 lb cod filets
  • ½ cup all-purpose flour
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried italian seasonings
  • 2 whole eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon dried parsley
  • 23 tablespoons olive oil, to drizzle on top of cods
  • Chopped parsley, to garnish
  • Lemon wedges, to garnish

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pat the cod filets dry with a kitchen towel and set aside.
  3. For the breading station, combine flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning in a bowl.
  4. In a separate bowl, mix eggs with a splash of water and whisk for about a minute. Set aside.
  5. In another bowl, mix panko breadcrumbs with dried parsley and set aside.
  6. Coat the cod filets first in the flour mixture, then dip in the egg mixture, and finally coat with the breadcrumbs until evenly covered.
  7. Place the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
  8. Bake in the oven for 12-15 minutes until cooked through.
  9. Garnish with chopped parsley and lemon wedges before serving, alongside greens.
