- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Ensure you have a blender or food processor ready with an opening on top for adding ingredients while blending.
- Halve the avocado, remove the pit, peel the skin, and place the avocado flesh into the blender or food processor.
- Add the white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender. Do not add the oil yet!
- Secure the lid and begin blending, slowly drizzling in the avocado oil as it blends. Continue blending for a few seconds after all the oil is added.
- Check the dressing's consistency and taste. If you prefer a thinner dressing, add another 1/4 cup of avocado oil and blend again.
Notes
You can substitute cilantro with basil or parsley for a different flavor profile.
Adjust the amount of salt according to your taste preference.
This dressing can be stored in the refrigerator for several days.
