Description

This Avocado and Corn Salad offers a burst of freshness with grilled corn, creamy avocados, and a tangy lime dressing. It’s perfect for quick meals or healthy gatherings.


Ingredients

  • 3 ears corn, grilled
  • 2 avocados, diced
  • 2 tbsp red onion, finely diced
  • 1 green chilli, diced
  • 2 tbsp cotija cheese, or other soft cheese
  • 2 tbsp cilantro
  • 1 tbsp pumpkin seeds
  • 1 lime, juice only
  • 1 clove garlic, small
  • 3 tbsp olive oil
  • 1 tsp mexican oregano
  • 1/2 tsp salt

Instructions

  1. Grill the corn until it is slightly blistered and cooked through, about 10 minutes, turning often. Alternatively, boil the corn if grilling is not possible. Once cool, cut the kernels off the cob.
  2. In a large bowl, mix the corn, diced avocados, red onion, green chile, cilantro, crumbled Cotija cheese, and toasted pumpkin seeds together.
  3. In a small bowl, whisk lime juice, minced garlic, olive oil, oregano, and salt together. Pour the dressing over the salad and gently mix to combine. Allow it to sit for 15 minutes for the flavors to meld before serving.

Notes

Replace cotija cheese with feta for a different flavor.
Add diced tomatoes for extra color and sweetness.
Serve chilled for a refreshing summer dish.
