- ½ cup chopped apple, about 1/2 a large apple
- 1 teaspoon maple syrup
- pinch of cinnamon
- ½ cup old fashioned oats
- ½–¾ cup unsweetened almond milk
- ¼ cup plain greek yogurt or coconut yogurt
- 2 teaspoons maple syrup, honey or your favorite sweetener
- ½ teaspoon vanilla
- ½ teaspoon cinnamon, or apple pie spice
- Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds
Instructions
- In a small microwave-safe bowl, combine the chopped apple, maple syrup, and a pinch of cinnamon. Stir well to coat the apples and heat in the microwave for 30 to 60 seconds until softened. Set aside 1/4 cup for topping later.
- In a container with a lid, mix together the oats, almond milk, Greek yogurt, maple syrup, vanilla, and cinnamon.
- Stir in 1/4 cup of the cinnamon apples into the oat mixture and shake to combine. Cover tightly.
- Place the container in the refrigerator overnight (or for 30-60 minutes if preparing same day).
- When ready to eat, remove the lid, and adjust consistency by adding more yogurt or almond milk if it appears too thick. Top with the reserved apple mixture and your favorite toppings like nut butter or nuts.
Notes
Feel free to adjust the amount of maple syrup based on your sweetness preference.
This recipe can be made vegan by using coconut yogurt and maple syrup only.
It can be prepared in advance for meal prep and stored in the fridge for up to 3 days.
