Description

This Apple Coffee Cake is a delightful blend of flavors with its moist texture, sweet brown sugar, and cinnamon combined with fresh diced apples. It’s easy to make and a great choice for breakfasts, brunches, or as a comforting dessert. Perfect for sharing with family and friends!


Ingredients

  • 3 cups (360g) all-purpose flour
  • 2 cups (426g) brown sugar, packed
  • 2 ½ tbsp cinnamon
  • 1 ½ tsp salt
  • 1 cup (226g) unsalted butter, melted
  • 2 ½ tsp baking powder
  • 1 tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (396g) granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup (227g) sour cream
  • ½ cup (118ml) milk
  • 2 ½3 cups (about 285-315g) diced apples, cut into ¼-inch chunks
  • 1 cup (113g) powdered sugar
  • ½ tsp vanilla extract
  • 24 tbsp heavy cream or milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine flour, brown sugar, cinnamon, and salt.
  3. Mix in the melted butter until the mixture becomes crumbly.
  4. In another bowl, whisk together baking powder, salt, granulated sugar, eggs, vanilla extract, sour cream, and milk.
  5. Add the dry ingredients and mix until combined; then fold in diced apples.
  6. Pour the batter into a greased 9×13 inch pan, spreading evenly.
  7. Bake for about 40-50 minutes or until a toothpick comes out clean.
  8. Prepare the glaze by mixing powdered sugar, vanilla extract, and heavy cream or milk to desired consistency and drizzle over the cooled cake.
