Description

These Apple Cinnamon Blondies are a delightful treat that combines the sweetness of apples with warm spices. Perfect for dessert, they are easy to prepare and will surely satisfy your cravings for homemade goodness!

Ingredients

Scale
  • 1 cup peeled, cored, and chopped apples (½” pieces)
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon dark brown sugar
  • 1¼ cups all-purpose flour
  • ¾ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ½ cup unsalted butter, melted
  • ¾ cups dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 tablespoons milk

Instructions

  1. Cook the prepared apples, brown sugar, and cinnamon in a frying pan over medium heat for about 5 minutes until softened. Transfer to a plate to cool.
  2. Preheat the oven to 350°F and grease an 8×8” pan, lining it with parchment paper.
  3. In a large bowl, whisk the flour, baking powder, salt, cinnamon, and nutmeg together.
  4. In another bowl, combine the melted butter, brown sugar, egg, and vanilla, whisking until smooth.
  5. Fold the wet ingredients into the dry ingredients with a rubber spatula until nearly combined. Gently incorporate the cooled apples and their juices.
  6. Spread the batter into the prepared pan evenly and bake for 18-22 minutes until the top is lightly browned. Avoid overbaking!
  7. Cool completely on a wire rack before icing.

Notes

Ensure the apples are chopped uniformly for even cooking.
Feel free to use other spices like allspice or ginger for a twist.
These blondies pair wonderfully with a scoop of vanilla ice cream.
