- 1 cup peeled, cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter, melted
- ¾ cups dark brown sugar, packed
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- Cook the prepared apples, brown sugar, and cinnamon in a frying pan over medium heat for about 5 minutes until softened. Transfer to a plate to cool.
- Preheat the oven to 350°F and grease an 8×8” pan, lining it with parchment paper.
- In a large bowl, whisk the flour, baking powder, salt, cinnamon, and nutmeg together.
- In another bowl, combine the melted butter, brown sugar, egg, and vanilla, whisking until smooth.
- Fold the wet ingredients into the dry ingredients with a rubber spatula until nearly combined. Gently incorporate the cooled apples and their juices.
- Spread the batter into the prepared pan evenly and bake for 18-22 minutes until the top is lightly browned. Avoid overbaking!
- Cool completely on a wire rack before icing.
