- 3 pounds baby yukon gold potatoes
- ¼ cup greek salad dressing
- 1 1/2 teaspoons greek seasoning blend
- ½ lemon juice of

Instructions
- Chop the potatoes in half (quartering any large ones) and place them in a large bowl.
- Cover the potatoes with cold water and let them soak for 30 minutes.
- Drain the water from the potatoes and rinse with fresh water.
- Dry the potatoes thoroughly, then add them to a mixing bowl with the salad dressing and seasoning. Toss to coat well.
- Spray the air fryer basket with non-stick spray and add the potatoes. Air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes.
- Taste the potatoes and add more Greek seasoning if needed. Before serving, sprinkle with fresh parsley and squeeze lemon juice over them.
