Description

Savor the irresistible flavor of Air Fryer Greek Roasted Potatoes! This dish features golden baby yukon gold potatoes, tangy Greek salad dressing, and fresh parsley, making it a healthy and comforting side for any meal.


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes in half (quartering any large ones) and place them in a large bowl.
  2. Cover the potatoes with cold water and let them soak for 30 minutes.
  3. Drain the water from the potatoes and rinse with fresh water.
  4. Dry the potatoes thoroughly, then add them to a mixing bowl with the salad dressing and seasoning. Toss to coat well.
  5. Spray the air fryer basket with non-stick spray and add the potatoes. Air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes.
  6. Taste the potatoes and add more Greek seasoning if needed. Before serving, sprinkle with fresh parsley and squeeze lemon juice over them.

Notes

Make sure to soak the potatoes for the best texture.
Adjust the seasoning according to your taste preferences.
Fresh parsley adds a lovely flavor and color to the dish.
