Instructions

  • Preheat the oven to 350°F and grease a 9×13-inch baking pan with butter.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Combine the buttermilk and vanilla in a spouted measuring cup.
  • In a mixing bowl, cream the softened butter and sugar on medium speed for about 5 minutes until the mixture is light and fluffy.
  • Gradually mix in the eggs until well incorporated into the butter mixture.
  • Alternately add the dry flour mixture and the buttermilk mixture, starting and ending with the flour, until everything is blended well.
  • Pour the batter into the prepared pan and bake for 30 minutes; let it cool for 30 minutes afterward.
  • Use a fork to poke holes into the cake, spaced about 1 inch apart.
  • In a separate bowl, dissolve the lime gelatin in 1 cup of boiling water, then stir in 1/2 cup of cold water and pour it over the cake.
  • Chill the cake in the refrigerator for 2 hours to set the gelatin.
  • In a chilled bowl, whip the heavy cream with sugar and vanilla until fluffy and soft peaks form.
  • Spread the whipped cream over the chilled cake, sprinkle with green sanding sugar, and serve.
