- 16 oz. cream cheese, softened (two 8-oz. pkgs.)
- 1 lb deli sliced corned beef or pastrami, roughly chopped
- 2 cups swiss cheese, shredded
- 1 cup sauerkraut, drained
- 1 cup sour cream
- ¾ cup thousand island dressing
- rye bread
- rye chips and crackers
- French bread

Instructions
- In a large bowl, combine all the ingredients and mix until well combined.
- Transfer the corned beef mixture to a 4-quart or larger slow cooker bowl.
- Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
- Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers, or bread. Enjoy!
Notes
For a lighter version, consider using reduced-fat cream cheese and sour cream.
Feel free to adjust the amount of sauerkraut based on your taste preference.
