Description

This Sausage, Butter Bean & Tomato Tray Bake is a delightful choice for a quick dinner. Packed with flavors from sausages, savory beans, and fresh tomatoes, this dish is both hearty and satisfying, perfect for busy weeknights and family gatherings.


Ingredients

  • 1 onion
  • 1 pepper
  • A pack of your favourite sausages (6 or 8, or 12 are fine for this recipe)
  • 1 tsp garlic puree (or 1 fresh, crushed clove)
  • 1 tbsp tomato puree
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tbsp worcestershire sauce
  • 1 tsp sugar
  • 1 400ml tin baked beans
  • 1 400ml tin chopped tomatoes

Instructions

  • Cut the onion and pepper into bite-sized pieces based on your family's preferences.
  • Heat some oil in a large frying pan with sides.
  • Add the sausages and stir to coat them in the oil. Cook until one side is browned as desired.
  • Once browned, add the onions and ensure an uncooked side of the sausages is facing down.
  • Cook until the sausages are browned on all sides and the onions are nicely caramelized.
  • Stir in the chopped pepper, sugar, garlic puree, tomato puree, paprika, and thyme. Cook for a minute to incorporate the flavors.
  • Add the tinned tomatoes, baked beans, and Worcestershire sauce. Stir to combine everything well.
  • Cover with a lid and let it cook on low for an additional 5-10 minutes until heated through and slightly thickened.
  • Serve hot, ideally with mashed potatoes and buttered white bread.

Notes

Feel free to customize the types of sausages used based on preference.
For added flavor, consider topping with cheese before serving.
A side salad can complement this dish well.
