- 2 tablespoons butter
- 1 yellow onion, chopped
- 1/3 cup crumbled blue cheese
- 1/4 cup panko breadcrumbs

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat oven to 450 degrees.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add chopped onion and sauté for 3-4 minutes until translucent.
- Transfer the onions to a large mixing bowl and let them cool for 2-3 minutes.
- Mix in crumbled blue cheese, panko breadcrumbs, salt, and pepper with the cooled onions.
- Gently mash the mixture with a fork until combined.
- In the same skillet, melt the remaining 2 tablespoons of unsalted butter over high heat.
- Season the filet mignon steaks with salt and pepper on all sides.
- Sear the steaks for 3 minutes on each side until they are browned.
- Top the steaks with the blue cheese mixture and place them in the oven.
- Bake for 4 minutes for rare doneness or 5-6 minutes for medium.
- Cover with foil and let the steaks rest for 10 minutes before serving.
Notes
For extra flavor, consider marinating the steaks for a few hours before cooking.
Make sure your skillet is large enough to fit the steaks without overcrowding them.
