Description

Filet Mignon with Blue Cheese Butter combines juicy steaks topped with a rich blue cheese blend. This simple recipe is perfect for an elegant dinner or special occasion.


Ingredients

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat oven to 450 degrees.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add chopped onion and sauté for 3-4 minutes until translucent.
  • Transfer the onions to a large mixing bowl and let them cool for 2-3 minutes.
  • Mix in crumbled blue cheese, panko breadcrumbs, salt, and pepper with the cooled onions.
  • Gently mash the mixture with a fork until combined.
  • In the same skillet, melt the remaining 2 tablespoons of unsalted butter over high heat.
  • Season the filet mignon steaks with salt and pepper on all sides.
  • Sear the steaks for 3 minutes on each side until they are browned.
  • Top the steaks with the blue cheese mixture and place them in the oven.
  • Bake for 4 minutes for rare doneness or 5-6 minutes for medium.
  • Cover with foil and let the steaks rest for 10 minutes before serving.

Notes

For extra flavor, consider marinating the steaks for a few hours before cooking.
Make sure your skillet is large enough to fit the steaks without overcrowding them.
Adjust cooking time based on your preference for steak doneness.
