Description

These Easy Confetti Cookies are bursting with flavor and color, made simply with white cake mix and delicious sprinkles. Perfect for any gathering or a delightful treat any time!


Ingredients

  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts. Stir until a thick dough forms.
  3. Gently fold in the rainbow sprinkles, being careful not to over-mix. The dough will be sticky and tacky.
  4. Let the dough rest uncovered for about 5 minutes, allowing it to thicken.
  5. Use a medium cookie scoop to portion out the dough.
  6. Roll each cookie ball in additional sprinkles, pressing gently to ensure they stick.
  7. Place the dough balls on the prepared baking sheet, spacing them about 3 inches apart. Bake for 10-12 minutes until the edges are set, but the centers are barely underdone.
  8. Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to firm up.

Notes

For best results, ensure the butter is slightly cooled before mixing with other ingredients.
Using a cookie scoop helps keep the cookie sizes uniform for even baking.
