Description

These Date Bars are a delightful treat that combines the sweetness of dates with a crumbly oat crust. Easy to make and perfect for snacks or dessert, they are sure to please everyone in the family.


Ingredients

  • 1 ½ cups oat flour
  • 1 cup old-fashioned rolled oats
  • ½ cup coconut sugar
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter or coconut oil, softened
  • 1 package, 8 ounces dates, chopped (about 1 ¼ cups)
  • 1 cup water
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F and line an 8×8 square baking dish with parchment paper.
  2. Combine the chopped dates and water in a saucepan, bring to a boil, then reduce the heat and let simmer for about 10 minutes, stirring occasionally, until the mixture thickens and the dates soften.
  3. Mix in the vanilla and lemon juice into the date mixture once it has thickened.
  4. In a medium bowl, combine oat flour, rolled oats, coconut sugar, and baking soda to create the crumble mixture.
  5. Add the vanilla extract and softened butter to the oat mixture, mixing with a fork or your fingers until a crumble forms and the dough begins to clump together.
  6. Press 2 cups of the oat mixture into the bottom of the prepared baking pan evenly to form a crust.
  7. Spread the date mixture over the crust in an even layer using a spatula.
  8. Sprinkle the remaining oat mixture (1 cup) over the date layer, gently pressing down with a spatula.
  9. Bake for 35-40 minutes or until the filling is bubbly and the topping is golden brown.
  10. Allow the bars to cool completely before cutting into 16 pieces. Enjoy!

Notes

Ensure that the dates are chopped well for an even distribution in the filling.
Feel free to substitute coconut oil for the butter if desired for a dairy-free version.
These bars can be stored in an airtight container for up to a week.
