Description

Circus Animal Cookie Rice Krispie Treats are a delightful, easy-to-make dessert that combines the rich flavors of circus animal cookies with gooey marshmallows and crunchy rice krispies. Perfect for parties or a quick treat!

Ingredients

  • circus animal cookies – 9 ounces
  • mini marshmallows – 10 ounces
  • rice krispies cereal – 6 cups
  • unsalted butter – 4 tablespoons
  • multi-colored nonpareils – 3 tablespoons
  • colored sprinkles – 3 tablespoons
  • white chocolate chips – 1/2 cup
  • red food coloring – 1-2 drops
  • heavy cream (optional) – 1/2 teaspoon

Instructions

  • Grease a 9×13-inch baking dish with cooking spray.
  • Pulse circus animal cookies in a food processor until they form a combination of crumbs and small pieces, saving 1/2 cup for topping.
  • In a large pot, melt unsalted butter and mini marshmallows over low heat, stirring continuously until the mixture is smooth.
  • Remove from heat and fold in the rice krispies, cookie crumbles, and 2 tablespoons of each type of sprinkle.
  • Press the mixture gently into the prepared baking pan using a greased silicone spatula.
  • Sprinkle the reserved cookie pieces on top.
  • Melt white chocolate chips in two bowls in the microwave for 30 seconds each.
  • Drizzle the plain white chocolate over the treats using a sandwich bag with a corner cut off.
  • Mix red food coloring into the second bowl of melted white chocolate to create pink chocolate, then drizzle it across the treats in the opposite direction.
  • Sprinkle the remaining sprinkles on top and let the dessert cool until set.

Notes

For a colorful touch, use different colored sprinkles based on the occasion.
Make sure to let the treats cool completely so they hold their shape well.
Store leftovers in an airtight container at room temperature.
