Description

Chili Lime Roasted Cauliflower brings bold, zesty flavors to your table with simple preparation. This dish combines the natural sweetness of cauliflower with the kick of chipotle, making it an ideal choice for a quick and healthy meal or snack. It’s an excellent option whether you’re looking for a tasty side dish or a vegetarian main.


Ingredients

  • 1 large head cauliflower , cut into florets
  • 2 garlic cloves , minced
  • 2.5 tbsp extra virgin olive oil
  • 1.5 tsp chipotle powder (more or less for spiciness!) (note 1)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice (1 medium to large lime)
  • 1 tbsp coriander/cilantro leaves , finely chopped (optional, sub parsley or chives)

Instructions

  • Preheat the oven to 200°C/390°F.
  • Place the cauliflower florets in a large bowl. Drizzle with olive oil and add the minced garlic.
  • Using your hands, mix and rub the oil and garlic over the cauliflower.
  • Sprinkle the chipotle powder, salt, and black pepper over the cauliflower and toss to ensure even coating.
  • Spread the cauliflower on a baking tray and bake for 25 minutes, tossing once halfway through, until the edges are caramelized and the cauliflower is tender.
  • Remove from the oven. Push the cauliflower together and drizzle with lime juice.
  • Sprinkle with chopped coriander, if desired, and serve hot.

Notes

Adjust the amount of chipotle powder to control the spiciness level to your preference.
For added flavor, try adding lime zest before baking.
