These Baked Chicken Thighs are irresistibly flavorful and easy to make. Simply season with a mix of spices, roast until crispy, and enjoy a perfect meal any day of the week!

- 8 chicken thighs (bone-in, skin-on)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C). Remove the chicken thighs from the fridge and let them reach room temperature.
- Pat the chicken dry with a paper towel to eliminate moisture. Mix all herbs and spices in a small bowl to create the seasoning blend.
- In a large mixing bowl, add the chicken thighs, olive oil, and ⅔ of the spice blend. Coat the chicken evenly, making sure to get some seasoning under the skin.
- Place the seasoned chicken on a rack over a baking sheet. Sprinkle the remaining spice mix on top of the chicken.
- Bake for 35 to 40 minutes until the internal temperature reaches 170°F. Optionally, broil for 2 to 3 minutes for added crispiness. Allow the chicken to rest for 5 minutes before serving.
Notes
Make sure to pat the chicken dry for extra crispiness.
Adjust seasoning to your taste; adding more or less garlic and paprika can enhance flavor.
